McFaddy Candy founder Katherine Ellis came out of three days of back surgery with a new straight spine and clear vision: to make toffee based on her mom’s recipe; and like all she loved, it had to be unique! She studied the science and art behind chocolate tempering, and the kinds of ingredients that could go into chocolate. Using her colorful imagination, she created toffee based on her favorite birthday cake (Strawberry Kiss), and discovered ingredients she didn’t know existed (Matcha, before the craze).
Like many women, Katherine has always appreciated beautiful packaging, and she knew she wanted to present her toffee in a visually-appealing way, that was also good for the environment. Mason jars and clear colorful vinyl labels were an easy choice, as they preserve the toffee, reveal its desirability and are 100% reusable and recyclable. Ingredients are of premium importance, with gourmet chocolate and organic sugar taking the lead, and loads of California almonds, fresh butter, organic agave and Madagascar vanilla rounding out the base for the world’s best toffee!
