Our farmers have turned their breeding cattle out to pasture for retirement where they feed only on grass. These roamers further mature in a relaxed environment and are not processed until they are at least 60 months – more than twice the age of regular cattle. Because the cows are older, the mean has a rich, developed grass-fed flavor alongside superb marbling. The result, a distinct and unique eating experience, enjoyed by Europeans for years.

CHEF’S NOTES

All of the meat is 100% Grass-fed including the wagyu and certified by the third-party audited Greenhorn Never Ever program.

There are three grades – Reserva MB 1-2, Galiciana MB 3+, and The Matriarch.

Natural State Hanging Method which sees the carcasses hung from the hip in their natural position and not from the Achilles thereby promoting better eating quality in the hindquarter cuts, particularly in the Striploin and the Rump.
